Simple and quick fix lunch

The tomato and feta salad, the perfect summer salad; and the most simple salad to whip together- especially on those hot summer days where one can’t be bothered for long food preparations. It is quintessential to any lazy summer weekend at home, or why not pack it for a day at the beach.

Give it a whirl for that dinner party, or afternoon snack, lunch, brunch or dinner.

Tomato and feta salad Recipe

3 medium sized tomatoes
1/2 cup of feta diced into small cubes (you can also substitute for 250g of bocconcini)
generous handful of spinach.
Balsamic vinegar
Place spinach on the bottom of a flat bowl or medium-large serving plate.
Chop tomatoes into thin wedges, add salt and pepper to taste and a touch of olive oil, mix well.
Crumble feta and layer tomatoes on top of spinach, drizzle olive oil and balsamic vinegar.
For extra flavour thinly chop some red onion and sprinkle on top.
Garnish with fresh basil leaves
