Perfect Summer Salads
Salads are the perfect accompaniment to any summer meal, especially those summer BBQ.
These two salads, Pear and Parmesan and Beetroot and Feta salads are quick, simple and extremely delicious. They are the perfect solution to ‘what-to-bring-when-your-told-not-bring-a-thing’ dilemmas that every person suffers through during this summer festive season.
They’re definitely crowd favourites and provide something different to the traditional garden salad. Check out the recipes below and whip them up for your next social function.
Afterall BBQ should be relaxing social occasions with friends and family, and not filled with overwhelming stress and anxiety.
PEAR AND PARMESAN SALAD with a mustard dressing
1 bunch/bag of rocket
2 pears, thinly chopped
handful of shaved parmesan
dijion or seeded mustard
olive oil
lemon juice
combine rocket, pear slivers and parmesan in a bowl, toss and mix well.
Combine olive oil and dijion or seeded mustard (your choice) and a squeeze of lemon, mix and drizzle over the salad.
Add grilled chicken breast or chicken strips to the salad for something more.
BEETROOT AND FETA SALAD with walnuts
3-4 medium beetroots
half a cup of walnuts
75g of feta
olive oil
fresh mint
Wash and dry the beetroot and remove tops and bottoms and any ‘bad bits’ from the beetroot. Preheat the oven to 250C
Roast the beetroot in the oven for 40-50 minutes wrapped in foil. Check regularly and a fork should be able to easily stab the beetroot once ready. Let cool. And peel off outer layer of skin from the beetroot
For convenience prepare beetroot ahead of time, and keep in a airtight container in the fridge.
Roughly chop beetroot, combine with diced or crumbled feta, walnuts and drizzle olive oil.
Garnish with fresh mint leaves
