Go Crazy for Pesto!

Going crazy over pesto? Utterly obsessed with the delicious spread.
Well we can’t blame you because we are too.

We recently added the delicious morsel to our menu in June, and it has been a crowd favourite with our customers. Haven’t tried pesto yet with your salad?
Well here are our top ways to incorporate pesto into your life.

1. Add pesto to YOUR OWN salad creation. Add it as a topping and our staff will put a generous serve on top of your own salad creation. Whether you choose a warm salad or cold salad, the results are both equally delicious.

2. Add it to one of OUR salad creations. Pesto is already in the Italian Meatballs, but why not try it some other creations- our favourite is adding it to the quinoa chicken salad- goes superbly!

3. Use it as a dressing. Yes Pesto can be a dressing. And yes we can add it to any salad creation or replace another dressing with pesto in any pre designed salad. We simply add a dollop and mix through. Try it as a dressing with a base of rice. Pesto + Rice equals a match made in salad heaven.

4. Make pesto at home. Yes making pesto is super simple and the possibilities for pesto uses at home is endless. Add it to that salad, or even into that sandwich for lunch. Why not mix it through your pasta at dinner? Or spread it on your toast topped with luscious avocado for breakfast or brunch. Need something to bring to that BBQ, bring some home made pesto and crunchy sourdough bread for snacks. The options are endless. Check out the recipe below and get cracking, your pesto obsession won’t wait forever.

Ingredients
quarter cup plus 1 tablespoon (55g) Pine Nuts
20g Almonds
1 medium clove Garlic, crushed
handful fresh Italian Basil
half an Avocado (be sure to test the avocado first to make sure it’s a good one!)
3 teaspoons Extra virgin olive oil
2 tablespoons Water
2 heaped tablespoons (20g) good quality Parmesan Cheese, grated
1/3 teaspoon Sea Salt

Combine all ingredients and blend, add extra salt pepper, oil and cheese to taste.

See, it is really that simple.
