Our weekday Breakfast go-to

If like many of us during the week breakfast is whatever you can grab in 30 seconds as you run out the door, then Bircher Muesli may be the answer to your breakfast woes! This simple recipe is pre-prepared the night before, so in the morning all you have to do is remember to grab it out of the fridge.

Bircher muesli is extremely versatile so no matter your preferences or intolerances, this recipe will work for you. Simply use a dairy or non-dairy milk and yoghurt, and if you’re gluten free, substitute oats for a mixture of grains, nuts and seeds.

Most supermarkets, or bulk grocers stock an array of muesli’s specifically for Bircher, however generally it is more economical to mix your own combination in bulk and seal it in jars. Our go-to mixture is listed below, but add and subtract your favourite nuts, seeds and dried fruit and make your own go-to combo.

– Whole Rolled Oats (untoasted)
– Almonds
– Crushed Nuts (hazelnuts, walnuts, peanuts)
– Cranberries
– Raisins
– Goji Berries
– Puffed quinoa
– Dried Apricot, Diced finely.
– Pepitas
– Shredded Coconut

For gluten free, simply subtract the oats and add larger amounts of nuts. Adding puffed quinoa and adding chia seeds are also a simple replacement that will leave the mixture light and creamy.

The key to Bircher Muesli is equal ratios; one part of dry goods to two parts liquid. So whether you wish to make a single portion or make a batch for the entire week, simply follow a 1:2 ratio and you can’t go wrong.

For a single portion, mix half a cup of muesli and your chosen yoghurt, with half a cup of milk and stir well. Place into a sealable container, and store in the fridge overnight to soak. In the morning, you can drizzle with maple syrup or honey for sweetness, and add a selection of fruit. Summer berries such as strawberries, raspberries and blueberries pair perfectly now that they are coming into season. This is a completely no mess, no fuss solution to breakfast- and will fuel you for the entire morning. Give it a go!
